Just add any number of "Hidden Email" fields and set them to the email addresses you want the message to be sent.

Define a new "Email - List" field, enter all the countries and email addresses for them in it.

Not sure what you mean.
If you add each country followed by " : ", followed by an email address and each of this combination separated by " ; " ( as instructed on that page ), if you select a country from that list the email address defined for it will receive the message.
